Breakfast Burritos - From Freezer to Microwave

Breakfast Burritos

1 lb breakfast sausage
1 lb bacon
1 cup chopped ham
16 oz cheese 
24 soft taco tortillas
12 eggs, extra large
1/2 c milk
1/3 c oil
1 tsp salt, pepper, lemon pepper or whatever seasoning you like.


1.  First, fry the bacon til crisp. Next, brown the sausage and fry the ham.  
2.  Whisk between 10-12 eggs with 1/2 cup milk
3.  Add about 1-2 TBS butter to skillet over med heat and scramble eggs til set.
4.  Season your eggs with whatever seasoning you like (salt, pepper, lemon pepper)
5.  Place 6-9 tortilla shells on a microwave safe plate and cover with a wet paper towel. 
      Microwave on med-high for approx 35 seconds, til warm and softened.  
6.  Line up all your ingredients for your burrito (don't forget the shredded cheese!) and 
      begin to fill your tortilla shells.
7.  Begin to tuck and roll your burrito, making sure there is no opening and the seam is 
      face down.
8.   Line a baking sheet with waxed paper or parchment paper and place burritos seam
      down.  Place if freezer approx. 1 hour, just to freeze them enough to where you can 
      place them in a freezer bag.  After an hour, remove from freezer, wrap each burrito 
      individually with plastic wrap and place in a ziploc freezer bag and place in freezer 
      til you are ready to use them.

NOTE:  To warm your burrito...remove from plastic wrap and place on a microwave 
               safe plate and cover with a wet paper towel.  Cook in microwave for approx. 2-3 
               minutes or until burrito is cooked through.
